Thanksgiving is coming up next week! Can you believe it’s already here?
I don’t know about you, but Thanksgiving just gets me in the mood to cook something hearty, and since we’re still doing the Paleo diet, I wanted to share with you some of my favorite side dishes that I’ve found on Pinterest (and one of my own!).
Let’s start with the one I’ve been making a lot lately — sweet potato hash. It’s a really great side dish paired with meatloaf (which is one of hubby’s favorites).
First, slice and cube your sweet potatoes. I usually buy this 3 lb bag of sweet potatoes from Aldi and it gives us enough to eat for dinner with leftovers.
Next, cook the sweet potatoes in your desired method. I will either boil them for 20 minutes or microwave for about 10-15 mins depending on how many potatoes you have (or until they are soft).
While the sweet potatoes are cooking, dice the onion.
Cook the onion in melted butter with garlic until onions are translucent.
Add Sriracha and crumbled bacon and cook for about 5 minutes more.
Until you get something that looks like this…
Once the sweet potatoes are done, mash them with a potato masher.
Add the onion and bacon mixture to the mashed sweet potatoes and mix well. Serve.
