I was trying to come up with a low sugar, quick, easy recipe for summer parties and I thought I would share my creation with you!
These mixed berry cheesecakes are super easy to make! They are great for parties because they are pre-portioned individual servings. It definitely makes it easier on me to know I have enough for everyone!
Before we start, can I just say…. WHA? This thing is HUGE!
1 box Sugar Free Cheesecake Jell-o Mix
1 cup almond milk
Berries of your choice (I used strawberries, blueberries and blackberries)
- Mix pudding mix with almond milk. Place in refrigerator and chill 5 mins to set.
- Wash berries and put into a food processor or blender. Pulse until the berries are mixed into a smoothie consistency.
- In your parfait cups, layer a tablespoon of pudding, berries, nuts, and cool whip last. Layer these ingredients until you reach the top of your parfait cups with cool whip being the top layer.
- Garnish with nuts.
- Chill before serving.
I searched everywhere for this little parfait cups. I eventually found some at Party City, but if anyone knows where I can get lots of these (especially on the internet somewhere), please let me know!
