I have an new passion… Making my own cashew butter!!
It’s delicious and so much less expensive than buying it in the store. Fair warning, it’s time consuming, but well worth the effort!!
There are only two ingredients — cashews and honey.
I start by putting 2 cups of cashews in the food processor. You can do as much as you want. Just keep in mind that it does get pretty thick toward the end and my food processor has a hard time with it. So, it’s best to use less.
Now, turn on your food processor. This is the time consuming part. It’s going to need to run for about 10 minutes or more.
During the first phase, it’s going to chop the cashews into small pieces.
This is when I add the honey. I use 1 teaspoon per cup of cashews. So for this recipe, I used 2 teaspoons. When it starts sticking to the outside of the container, use a spatula to scrape down the sides.
During the next phase, it’s going to turn into a huge ball of cashew-y goodness. It’s supposed to do this, so resist the urge to add any moisture!!
The ball will roll around for a little bit and then start breaking apart. You’ll be left with a creamy cashew butter!
Transfer to an air-tight container (I use a mason jar) and store in the refrigerator for up to 5 days. Although after you taste it, I doubt it will last that long. I know it doesn’t in my house!
Hubby says it tastes like peanut butter fudge and I have to say, I agree. Try it… You’ll love it!
